Settings for EOP with Exchange 2013 all show different settings than instructions

Greetings,

I am trying to setup the demo of Exchange EOP for my exchange 2013 CU3 environment, but every bit of instructions i see on the internet do not reflect what I see on my server.

I don't have inbound and outbound, i have send and receive. Now that is obvious, but it also talks about a type of on-premises and I dont even have that option, I have custom, internal, internet, partner, client

I can pretty much figure out what it should be, but I would really like to see instructions somewhere that reflect my choices?

Any help would be appreciated
