Mail content being stripped on reply/forward

I have a user in my organisation who has a problem with emails he sends. We use Outlook and Exchange 2010.

Basically when he forwards or replies to an external email address (gmail / hotmail for example) it automatically strips any information out of the email from below his signature at the start of the email - it also strips out any attachments if present.

If he forwards/replies to an email internally within our organisation it retains all information and attachments as expected so there are no issues there.

He gets this issue regardless of what PC he logs onto.  I have tested his mail profile from my PC and I get the same problem. Then, if I log back onto my email account I can forward/reply to the same email addresses with no problems.

I have checked the basics in his exchange profile  and they have the same settings as my own so there doesn't seem to be any issues there. Does anybody know what could be causing this?

*EDIT - I have just found that the content of the received email is actually viewable if you go to "View Source" and view the code?
